Why is my wine cooler not holding temperature?
Short answer
The number that matters is the one at the bottles, not the one on the panel.
The reasoning behind that
Wine cabinets fail quietly: the display holds at the set point while the racks sit several degrees warm, because the sensor is reporting from a spot the circulating air actually reaches. On a dual-zone column, one zone holding while the other drifts is proof the sealed system is fine and puts the fault in that zone's evaporator, fan or damper. Fog on the inside of the glass is a separate fault, and in Carlsbad it is usually the door seal or the pane heater rather than anything in the cooling circuit.
How the diagnosis goes
What we check, in order: a probe reading at rack height in each zone, compared against what the panel claims; whether the circulation fan in the drifting zone is turning at all; the damper; the zone sensor against spec; and the condenser, which on a cabinet built into bar joinery is very often the entire answer. Only after all of that does anything in the sealed system get discussed, let alone quoted.
Carlsbad splits neatly on this one. Along the coast, in Olde Carlsbad and the streets west of the freeway, the complaint is almost always humidity: fogged glass, a gasket that has stopped pulling flat, condensation running down the front of the racks. Inland, in La Costa and Bressi Ranch, the complaint is heat, because the cabinet is usually set into a bar or a butler's pantry with very little clearance and those rooms run warmer in the afternoon than the unit was specified for.
